Zoodle Bruschetta Balsamic Chicken Recipe

Zoodle Brushetta Balsamic Chicken… wow isn’t that a mouth full lol. When I went food shopping last week I picked up these ingredients randomly like always and when I was putting them away I thought what if I make a dish with them? I’ve been dying to make balsamic chicken and I love bruschetta so why not add them together? The zoodle part came in because I’m trying to cut out pasta so I’ve been searching for healthy alternatives and I just love Zucchini. Let me just tell you, this is probably the most amazing dish I’ve ever made. It’s light, sweet, and healthy! The best combination! Well anyway, enough chatting I’m sure you’re hungry now so let’s get into the recipe!

What You’ll Need: 

  • Chicken marinated in Balsamic Vinegar
  • Zoodles
  • Red onion
  • Tomato
  • Grated Parmesan Cheese
  • Garlic
  • Balsamic Vinegar
  • Olive Oil
  • Sea Salt
  • Pepper

Chicken:

  • Chicken Cutlets
  • Balsamic Vinegar
  • Olive Oil
  • Pepper
  • Sea Salt
  1. Place 1 tbsp of olive oil into the dish/plastic bag/Tupperware (whatever you’re going to use to marinate the chicken) at the bottom.
  2. Lay your chicken cutlets on top of the olive oil.
  3. Pour your balsamic vinegar (as much as you need for it to soak into how many chicken cutlets you have) onto the chicken and add the pepper and sea salt.
  4. Flip them over and repeat on the other side of the chicken.
  5. Place in fridge overnight to marinate. (at least 6-8 hours)

  1. Once chicken is fully marinated you can begin grilling it.
  2. You can cook the chicken on the grill outside, in a pan, the oven, how ever you want. (I put mine in a frying pan and made them on the stove top).
  3. Place a little olive oil on the bottom of your frying pan and add in your chicken cutlets along with the remaining balsamic vinegar that was in the marinade.
  4. Cook thoroughly.

Bruschetta:

Ingredients

  • Tomato
  • Red onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp Balsamic vinegar
  • Sea Salt
  • Pepper
  • Grated parmesan cheese

What To Do:

  1. Cut your tomato into diced pieces and add to the container.
  2. Chop your red onion into diced pieces and add to the tomatoes in the container.
  3. Cut your 2 cloves of garlic and add to the mix.
  4. Add 2 tbsp of olive oil to the mix.
  5. Add 1 tbsp of balsamic vinegar to the mix.
  6. Add 2 tbsp of grated parmesan cheese to the mix.
  7. Add desired amount of sea salt and pepper to the mix.
  8. Stir until completely mixed.
  9. Place in fridge to keep cold.

Zoodles:

Ingredients

  • Zoodles (or use a zucchini and spiral cut it to make into a noodle shape).
  • Olive oil
  1. Take another frying pan and add a little olive oil to the bottom.
  2. Place zoodles in pan and heat for 3 – 5 minutes.

Final Step = put it together & eat it! 

  1. Place zoodles onto a dish.
  2. Put balsamic chicken on top of zoodles.
  3. Top with bruschetta mix.
  4. Enjoy!
