Would you believe me if I said the first time I tried salmon I hated it? I’m a pescatarian, which for those who don’t know means I am a vegetarian, but I eat fish. The first time I had salmon it kinda reminded me of chicken, hence why I hated it. I gave it another try though because of the benefits it has and now I love it. Okay well not love, but I do eat it now and enjoy it.
The other day I really wanted salmon for lunch and typically when I make salmon I have vegetables and rice with it, but I wanted something different. So, I created this spinach tomato mushroom salmon recipe! It’s so easy and really delicious!
Spinach Tomato Mushroom Salmon
- 3 oz wild caught salmon
- 1/2 cup spinach uncooked
- 1/2 cup grape tomatoes
- 1/2 cup mushrooms
- 1 whole lemon juiced
- Italian seasoning
- garlic powder
- onion powder
Start by placing your spinach at the bottom of your plate, this is the base for the meal.
Cut and juice 1 whole lemon into your pan, add your salmon, tomatoes and mushrooms. Coat salmon on both sides with Italian seasoning, garlic and onion powder.
Turn on heat to a medium flame and cook salmon for 10 minutes on each side or until perfectly pink and not raw (I personally like mine a little more on the charred side).
Once finished, add your cooked tomatoes, mushrooms and salmon on top of your bed of spinach. Add more lemon juice or any toppings you desire and enjoy!
