Roasted broccoli and sweet potatoes is easily one of my favorite dishes. It’s super simple and easy to make, full of flavor, and healthy! 2019, is the year of health for me, so I am here to share this easy recipe with you! This also makes a great side dish, but definitely don’t have this every night (sweet potatoes are still a carb). I’m the type of person that actually hates eating fresh broccoli or steamed broccoli. I love roasted broccoli, there’s something about burnt broccoli that I just love. I hope you enjoy this recipe and don’t be afraid to have some burnt broccoli, I promise you will love it.
Easy Roasted Broccoli & Sweet Potatoes
- 1 sweet potato, peeled and cubed
- 1 cup broccoli I like to use frozen
- 2 ceramic dishes or cooking bowls
- olive oil, drizzled
- garlic powder
- Italian seasoning
First, preheat your oven to 375 degrees, then peel your sweet potatoes and cut them into cubes.
Place your sweet potatoes and broccoli into 2 separate dishes (I used ceramic bowls).
Drizzle a tiny bit of olive oil onto both the broccoli and sweet potatoes, then top with your garlic powder and Italian seasoning (add as much as you'd like).
Place both dishes into the oven and let bake until your desired roast texture, as you can see I like mine to be crispy and slightly well-done.
