Healthy Shrimp “Fried” Rice

Fried rice is easily one of my favorite foods. Its terribly bad for you, especially when it’s cooked with insane amounts of salt, but it’s so good. Since restarting my whole fitness/health journey, I decided I needed to come up with a recipe for a healthier “fried” rice, which is exactly what this post is! I’m going to be sharing how to cook Healthy Shrimp “Fried” Rice. I’m putting “fried” in quotes because it’s not exactly fried. This recipe is super easy to make and tastes delicious + it’s healthier than traditional fried rice! You’ll see, let’s get cooking!

Healthy Shrimp "Fried" Rice

Ingredients

  • 3 eggs
  • 1 cup shrimp
  • 1 cup brown rice
  • 2 cups mixed vegetables
  • 1 tbsp lemon pepper seasoning
  • olive oil cooking spray

Equipment

  • 2 pots filled with boiling water
  • 1 pan with olive oil spray
  • measuring cup

Instructions

  1. Start by measuring out all of your ingredients. Then begin preparing your brown rice (my box said 1 cup of rice to 1 cup of water, check your box for accurate directions). 

  2. Once your second pot of water is boiling, throw in your 2 cups mixed vegetables (I used frozen organic mixed vegetables) and cover to let cook thoroughly. 

  3. Spray your pan with olive oil cooking spray and begin cooking your shrimp. Add 1 tbsp of lemon pepper seasoning and toss to coat. Cook shrimp all the way through then set aside and reuse pan for eggs. 

  4. Reusing the same pan as the shrimp, spray a tiny bit of olive oil cooking spray and throw in your 3 eggs. Scramble until fully cooked. 

  5. Once every ingredient is cooked you can assemble your dish. Start with your brown rice, then throw on your egg, and mixed vegetables. Lastly, top off the rice with your shrimp and enjoy!
